Chocolate Chocolate-Chip Cookies


They're brownies in disguise . . .
Chocolate Chocolate-Chip Cookies
From Savory Sweet Life

Ingredients:
1 C. (2 sticks) Butter
3/4 C. Sugar
3/4 C. Brown Sugar
2 Eggs
2 t. Vanilla Extract
1/2 t. Salt
1 t. Baking Soda
3/4 C. Cocoa Powder
2 C. Flour
12 oz. Chocolate Chips
2 t. Instant Coffee

Directions:
Preheat oven to 350 degrees.  Cream butter, sugar, and brown sugar until it is nice and fluffy (approx. 3-5 minutes on medium speed).  Add eggs and vanilla and beat for an additional 2 minutes.  Add baking soda, salt, cocoa powder, instant coffee, and flour and beat until well combined.  Finally add chocolate chips and stir with a wooden spoon until well distributed.  The cookie batter should be somewhat thick and can be refrigeratored to keep for later at this point if you'd like.

Drop about 2 T. of dough for each cookie onto a baking sheet lined with parchment paper.  Bake for 10-12 minutes until tops of cookies are slightly firm to the touch.  Remove from heat and allow the cookies to stay on the cookie sheet for an additional 2 minutes.

Notes:  While these were amazing right out of the oven, they got a little hard once they cooled and particularly didn't last well after a couple days.  If/when I make them again, I might try adding another egg or egg yolk to make them a bit more chewy?

  2. These were a hit at the Olde Coloma Theatre 2010 Season Opener!!!! I think I may have overcooked them a little bit, as they were crunchy and not chewy. However, everyone loved them.
