Pumpkin Bread

Actually - I think better than the pie.

Pumpkin Bread
Adapted (slightly) from Epicurious

3 C. Sugar
1 C. Vegetable Oil
3 Eggs
1 16 oz. can Pumpkin
3 C. Flour
1 t. ground Cloves
1 t. ground Cinnamon
1 t. ground Nutmeg
1 t. Baking Soda
1/2 t. Salt
1/2 t. Baking Powder

Preheat oven to 350 degrees.  Butter and flour two 9x5x3 inch loaf pans.  Beat sugar and oil in large bowl to blend.  Mix in eggs and pumpkin.  In separate bowl, mix flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder.  Stir dry mix into pumpkin mixture in 2 additions. 

Divide batter equally between prepared pans.  Bake about 1 hour, then cover with tinfoil and bake for about another 15 minutes or until tester inserted into center comes out clean.
