Caramelized Onion and Kale Pizza


It sort of looks like a UFO, right?  Right???

Caramelized Onion and Kale Pizza
From A Chocolate Covered To-Do List

Ingredients:
Pizza Dough (you're on your own here - I'm still intimidated and my pre-made one was nothing special)
1 large Onion, chopped
1 T. Butter
1 t. Brown Sugar
3 cloves Garlic, crushed and chopped finely
1 C. Mozzarella, shredded
1 Bell Pepper, diced
1 Roma Tomato, chopped
Honey
1-2 t. Salt
1-2 leaves of Kale (a confession - I ran out of kale and didn't use anywhere near this amount)

Directions:
Melt butter in a non-stick skillet and stir in the onions with brown sugar and 1/4 t. salt.  Let simmer over medium heat for 5-10 minutes until onions wilt.  Then turn the heat to low and stir often until the onions are caramelized to your liking, 20-40 minutes.  Add garlic a few minutes before you turn off the heat.

Spread 3/4 of the mozzarella on the pizza dough.  Next, sprinkle bell pepper and tomato.  Then add the the caramelized onions to the pie.  Drizzle a couple tablespoons of honey over the top.  Layer on the last 1/4 of the cheese and shake a teaspoon or so of sea salt over the top.

Shred kale and evenly sprinkle on top of the pizza.  Bake in the oven for 15 minutes.  Enjoy!
