Avocado Fries


Pure Genius.

Avocado Fries
Adapted from Circle B Kitchen, hat tip to the Kitchn

Ingredients:
1/8 C. Flour
1/2 t. Kosher Salt
1 large Egg, lightly beaten
1/2 C. Panko Bread Crumbs
1 Avocado, pitted, peeled, and sliced into 1/2 inch wedges

Directions:
In a medium saucepan, heat about 1/4 inch vegetable oil until very hot (I don't have a thermometer but if you're fancy like that, the original recipe says it would be 375 degrees).

Meanwhile, mix flour with 1/4 t. salt in a shallow plate.  Place panko in a separate shallow plate.  Sprinkle avocado slices with remaining salt.  Dip each slice in flour, shaking off excess, then dip in egg and panko.

Once all slices are coated, fry until deep golden, flipping after about 30 seconds to fry the other side.  Transfer slices to a plate lined with paper towel and eat immediately.

Note:  I wimped out a bit on this - the original recipe called for 1 1/2 inches of oil, which I think would mean that you don't have to flip it.  I frankly didn't have that much oil so I went with what I had.  Maybe it was actually healthier?  Yep, totally healthy.
