Avocado and Grapefruit Salad
Inspired by a Gourmet recipe on Epicurious

Ingredients:
2 T. Scallions, chopped
1 t. Sesame Oil
1 t. Apple Cider Vinegar
2 t. Honey
1 Avocado, sliced
1 Grapefruit, chopped
2 C. Spinach
Salt and Pepper to taste
Directions:
Whisk first 4 ingredients in small bowl to blend. Season dressing to taste with salt and pepper. Arrange spinach on plate and top with avocado, grapefruit, and dressing.
