Campari Sandwich Cookies


They just can't quite contain themselves . . .

Campari Sandwich Cookies
Adapted from I Know How to Cook!

Ingredients:
3/4 C. Butter, softened
1/2 C. Sugar
2 C. Flour
1 Egg
1/2 t. Salt
2 1/2 T. Campari
Some sort of jam of your choice (I used strawberry and plum)
Powdered Sugar, for sprinkling

Directions:
Preheat the oven to 350 degrees and grease a baking sheet with butter.  Mix the remaining butter, sugar, egg, flour, salt, and Campari to make a soft dough.  Depending on how you feel, you might even use a dab more Campari than called for (I might try this next time).  Roll the dough out on a floured work surface to a thickness of 1/8 inch.  Cut into circles.  Place on the baking sheet and bake for 10-12 minutes.  Let cool, then pair the cookies off in like size, flip them over, put some jelly on one underside and stick it to its mate.  Sprinkle with powdered sugar to be fancy.
