Cherry Tomatoes Stuffed with Marinated Feta

Cherry Tomatoes Stuffed with Marinated Feta
From Epicurious

7-8 oz. Feta, cut into 1/4-inch cubes
2 T. Olive Oil
1 T. Shallots, minced
1/2 t. fresh Oregano, chopped
1 lb. large Cherry Tomatoes
Pitted Kalamata Olives, halved lengthwise

Toss feta, oil, shallots, and oregano in small bowl. Season with salt and pepper and allow to marinate for a couple hours if possible.

Cut tomatoes crosswise in half and scoop out tomato pulp with small spoon (or, ahem, talk sister into doing so for you).  Place tomatoes, cut side up, on serving plate.  Stuff hollowed tomatoes with marinated feta.  Slide in olive half alongside cheese.  Can be made ahead of time and pulled out to impress when company arrives!
