Pumpkin-Apple Blobs (Muffins?)



"Well it's kind of a - kind of a mass. It keeps getting bigger and bigger."

Pumpkin-Apple Blobs
Adapted from Bon Appetit via Epicurious

Ingredients:
1 1/2 C. Whole Wheat Flour
1 C. Oats
1 T. Pumpkin Pie Spice
1 1/4 t. Baking Powder
1 C. Sugar
1 C. Canned Pumpkin
1/4 C. Vegetable Oil
2 Eggs
1 1/2 C. Apples, peeled, cored, and chopped
1 C. Raisins
1/2 C. Walnuts, chopped

Directions:
Preheat oven to 350 degrees.  Grease twelve large muffin cups.  Stir sugar, pumpkin, oil and eggs in large bowl until well mixed.  Mix in first four (dry) ingredients, apples, raisins and walnuts.  Batter will be pretty dry/lumpy but soldier on.  Place equal amounts of batter into prepared cups.  Bake until muffins are golden brown and tester comes out clean, about 30 minutes.  Let cool completely in order to remove from muffin tin.
