Turkey Noodle Soup

Nothing cozier.

Turkey Noodle Soup
Adapted from Joy of Cooking Becker Chicken Soup

4 C. Turkey, chopped
3 Carrots, diced
3 Celery sticks, diced
4 Garlic cloves, roughly chopped
1 large Yellow Onion, diced
8 cups Turkey Broth
3 T. Italian Seasonings
2 T. Oregano
2 t. Curry Powder

If you're feeling ambitious (I wasn't), brown the turkey and veggies in a skillet with some vegetable oil.  Then, add everything but the curry powder to a large pot (and feel free to play with the seasonings as you wish).  Bring to a boil, reduce heat to a simmer, and cook for 1 hour and 15 minutes.  Stir in curry powder, season with salt and pepper to taste, and enjoy!
