Fish Tacos


Ignore the shoddy manicure, focus on the fantastic taco.

Fish Tacos
From my mama

Ingredients:
2 Fish filets (I prefer Salmon but catfish works as well)
1 can Chipotle Chiles in Adobo Sauce
1 C. Cheddar Cheese, shredded
1 C. Lettuce, shredded
1 Tomato, chopped
1/4 C. Cilantro, chopped
2-4 Tortillas (flour or corn, depending on your preference)
Hot sauce of choice

Directions:
Heat about 1 T. chiles in adobo sauce (more or less depending on how spicy you like it) on medium in a skillet.  Add fish and cook until done, stirring occasionally.  Separate into bite-size pieces.

In separate skillet, heat oil on medium-high heat.  Add a tortilla and brown slightly (probably less than 1 min.), turning once to cook on both sides.  Remove tortilla, blot on paper towels, add fish and cheese.  Serve immediately with the lettuce, tomatoes, cilantro, and hot sauce of choice.
