Chile Con Queso


Tub o' cheese.
Chile Con Queso
From Homesick Texan

Ingredients:
1/2 Onion, diced
4 cloves of Garlic, minced
3 Serrano Peppers, diced
3 Jalapeno Peppers, diced
2 T. Butter
2 T. Flour
1 C. Milk
6 C. Cheese of choice, shredded
1/2 C. Cilantro, chopped
2 Plum Tomatoes, peeled and diced
1/2 C. Sour Cream
Salt to taste

Directions:
Melt the butter in a saucepan on medium-low heat, then cook the onions and peppers until onions are translucent.  Add the garlic and cook for another minute.  Whisk the flour into the mixture and cook for about thirty seconds.  Add milk to saucepan and cook on medium, whisking constantly until sauce is thick, about five minutes.  Stir in cilantro and tomatoes.

Turn heat down to low and add cheese 1/4 C. at a time, stirring until completely melted.  Repeat for all the cheese.  Stir in the sour cream.  Add salt to taste.
