Cinnamon Bun Pancakes with Maple Butter Icing


Don't fight the frosting.
Cinnamon Bun Pancakes with Maple Butter Icing
From Pioneer Woman's Tasty Kitchen

Ingredients:
1 1/2 C. All-purpose Flour
3 T. White Sugar
1 C. Powdered Sugar
1 T. Maple Syrup
1/2 t. Salt
4 t. Baking Powder
1 T. Cinnamon
2 Eggs Beaten
1 1/4 C. Milk
2 T. Corn Syrup
1/2 C. Butter, Melted
1 T. Vanilla

Directions:
In medium bowl, combine flour, sugar, salt, baking powder, and cinnamon with a whisk. Whisk well to make sure everything is combined.  In separate large bowl, beat together eggs, 1 C. milk, corn syurp, 1/4 C. butter, and vanilla. Stir in flour mixture.

Heat a lightly oiled frying pan over low heat. Add dab of butter and, when melted, pour about 1/4 cup batter onto griddle.  Brown on first side until bubbles begin to form then flip to brown on second side.

For the icing:  Whisk powdered sugar, 1/4 C. butter, dash of salt, maple syrup, and 1/4 C. milk until smooth.
