I did not intend to eat all of these in one sitting . . .
Inspired by Annie's Eats
Ingredients:
1 ginormous Sweet Potato
2 T. Olive Oil
1 T. Light Brown Sugar
1/2 t. Kosher Salt, plus extra for sprinkling after
1/2 t. Cayenne Pepper
Directions:
Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil (for super easy clean-up) and grease it with olive oil.
Cut the sweet potato into thick fries and toss with olive oil, sugar, salt, and cayenne pepper. Bake for 15 minutes, turn over, and bake for an additional 10 minutes. Sprinkle with more kosher salt (because it's so good).
