All the yumminess, none of the campfire smoke.
S'mores Cupcakes
Adapted from Martha, with a genius idea from Not Without Salt
Ingredients:
1 1/8 C. Sugar
3/4 C. Flour
1/2 C. Cocoa Powder
3/4 t. Baking Powder
3/4 t. Baking Soda
1/2 t. Salt
1 large Egg
1/2 C. Whole Milk
1/4 C. Vegetable Oil
1 t. Vanilla
1/2 C. Water, boiling
3/4 C. Graham Cracker crumbs (try blending in your food processor)
1/6 C. unsalted Butter, melted
4 oz. semi-sweet Chocolate Chips
12 Marshmallows
Directions:
Preheat oven to 350 degrees. Line 12 standard muffin tins with cupcake liners and set aside.
Sift 1 C. sugar, flour, cocoa powder, baking powder, baking soda, and salt together into the bowl of an electric mixer. Mix together on low speed. In separate bowl, mix together egg, milk, oil, and vanilla. Add to flour mixture and beat on low speed for 30 seconds. Scrape down sides of bowl and continue mixing for 2 minutes. Add boiling (or, to be realistic, pretty hot) water and mix to combine. Be strong and trust that even though it looks really, really thin, it will all work out in the end. Set aside.
Place graham cracker crumbs, remaining sugar, and melted butter in bowl. Stir until well combined. Place 1 T. graham cracker mixture into the bottom of each prepared muffin cup. Use the bottom of a small glass or whatever you have handy to pack crumbs into the bottom of each cupcake liner. Place 2 t. chocolate in each muffin cup and transfer muffin tins to oven. Bake until chocolate begins to melt, about 5 minutes.
Remove muffin tins from oven and fill 3/4 full with cake batter. If you have remaining chocolate and/or graham cracker mix, feel free to sprinkle on top. Return to oven and bake until tops are firm and tester comes out clean, about 18 minutes.
Remove muffin tins from oven. Smoosh (a technical term) marshmallows until generally flat and place one firmly on top of each muffin. Return muffin tins to oven for about 4 minutes. In last minute, turn on broiler to brown. Leave in until you achieve your desired level of marshmallowy brownness (the one in the picture was only left to broil for about 1 minute).
Remove cupcakes and serve as soon as they are cool enough to eat!
