Dal


Healthy and yet still good!  Who knew such a thing was possible?!

Dal
From Joy of Cooking

Ingredients:
2 1/2 C. Lentils
6 C. Water
1 large Onion, sliced
5 cloves Garlic, minced
3 t. Ginger,  peeled and minced
1 t. Turmeri
1 1/2 t. Salt
2 Jalapeno Pepper, seeded and finely chopped
2 Plum Tomatoes, diced
4 T. Cilantro, chopped

Directions:
Place lentils, 5 C. water, onion, garlic, ginger, and turmeric in saucepan and bring to boil.  Reduce heat and simmer, covered for about 20 - 25 minutes.  Stir in remaining water and salt.  Simmer, partially covered for additional 20 minutes.  Add peppers, tomato, and cilantro and serve.  I really liked it on a cracker but you can also serve on rice.
