Turkey with Potatoes

This picture makes me feel like I need more greens in my life.

Turkey with Potatoes
Adapted from Gina's Skinny Recipes

Ingredients:
1 medium Tomato, chopped
5 cloves Garlic, minced
1/2 C. fresh Cilantro, chopped
24 oz. Ground Turkey
4 Green Onions, chopped
1 C. fresh Peas (optional - you know, if you want to be healthy)
3 small Potatoes, peeled and diced into 1 inch cubes
16 oz. can Tomato Sauce
3/4 C. Water
1 T. Cumin
1 T. Garam Masala
1 t. Cayenne Pepper
3 Bay Leaves

Directions:
In a large skillet, brown turkey and season with cumin.

When meat is browned and cooked through, add green onions, chopped tomato, peas, potato, tomato sauce, water, garam masala, cayenne pepper, and bay leaf.

Cover and simmer over medium-low heat until potatoes are cooked through, about 25 minutes stirring occasionally.  Remove bay leaves (or don't and warn your guests) and serve over rice or couscous.
