Mashed Potato Puffs


Did you forget your side at home and wind up with a ton of left-over mashed potatoes after Thanksgiving?  Oh, that was just me?

Mashed Potato Puffs
Adapted from the kitchn

Ingredients:
2 C. Potatoes, mashed
3 Eggs, beaten
3/4 C. Gruyere, grated
1/4 C. Jalapeno peppers, minced
Salt and freshly ground pepper

Directions:
Heat the oven to 400 degrees.  I'd suggest using (although I didn't do it myself) muffin liners; otherwise, grease the cups of a popover tin - the recipe will make about twelve all together.

Whisk together the mashed potatoes, eggs, 1/2 cup of Gruyere, and jalapenos.  Taste and season with salt and pepper, as you wish.

Fill each muffin cup about 2/3 full.  Sprinkle the top of each potato puff with the remaining grated cheese.  Bake for 20 minutes, or until the potato cups are set, browned on top, and hot through and through.  Remove from tins and serve immediately.
